Spinach and Avocado Pesto

Our favorite way to use this raw, gluten-free, dairy-free, preservative-free and vegan friendly spinach pesto, is on our Brown Rice Pasta dish! All you need is four simple ingredients!

Prep Time: 5 minutes
Cooking Time: 0 minutes
Yield: 4 servings

INGREDIENTS
1 cup spinach
1 avocado
¼ cup olive oil
½ cup walnuts (optional)

DIRECTIONS
1. Add to the food processor spinach, avocado, walnuts and oil.
2. Once your ingredients are in, proceed to pulse until loose consistency.
3. If needed to loosen your pesto more just add water gradually until desired texture.
4. Don’t forget to add salt and pepper for taste!
5. Add your pesto to your already cooked choice of pasta and enjoy! Our favorite, is the quinoa or brown rice pasta! Your dish your pick!

This is a great way to add iron, potassium, magnesium, calcium, fiber, vitamin E, vitamin B, folic acid, minerals and your MUFA’s to your dish! By adding avocado, to your meals, you help maintain cholesterol levels in the healthy range and lower your risk for heart disease.

Remember, healthy clean meals don’t have to be complicated or expensive. Always aim for whole foods for delicious and nutritious meals that feed your body, mind and soul. Best of all, these are healing foods! Give them a try some time!

Food as Medicine

Today we live in a world that is full of everything man made engineered as much as possible but very little to no natural and nutritious ingredients, wouldn’t you agree? We read Butylated Hydroxyanisole, Butylated Hydroxytoluene, TBHQ which stands for Tertiary Butylhydroquinone and Sodium Nitrite. Do we even know what these are or even mean? Not even my word processor can recognize the spelling and continues to tell me to spell check, well so should you! If we can’t pronounce it then we shouldn’t even consume it! There are so many dangers in these modern preservatives and additives that it will take me forever to list them all here, however as a homework assignment whenever you have some down time I encourage you to look these up and others so that you can see the dangers and the threats it can post to our health. Which brings me to my next subject- how the foods we eat today affect us for the good or bad.  Some foods can contribute to high blood pressure, obesity, inflammation and so much more and if we don’t’ take control of our health, we are giving others full control of that, who?

Yes, that’s who! That very picture says it all, doesn’t it?  When we develop these lifestyle diseases we are taught that prescription drugs are the only solution. In reality, all they do is hide or cover up the real underlying problem. With health cost on the rise, wouldn’t you agree that even with health insurance  is still hard to even keep up with our medical expenses? My wife and I were part of that system until we realized nothing good was coming out of it! With her asthma not getting any better we decided to take an alternative approach to get her better and we did. We started to practice a more of a holistic approach to treat the underlying problem causing her asthma and that was INFLAMMATION (on another blog I will talk about how this guy is the main culprit of today’s leading diseases) but going back to prescription drugs, on a monthly basis we were spending on average $400+ on her asthma medications and she was not getting any better.  Instead, with her doctor’s supervision and changing her eating habits and developing new lifestyle changes we were able to bring her down from 5-6 medications to only 1.  How, you might ask?  With food that simple.

Yes friends food can act as medicine and can help us prevent such diseases if not reverse them.  However, we must first learn what foods are damaging to us and which foods can nourish us. Therefore, take control of your life and instead of investing all your money on prescription drugs why not find ways to use some of that money and invest it in real health care:  by simply introducing more whole foods and eating clean.  Many give the excuse that is too costly to “be healthy” but in reality is not! It’s an investment towards your health and if this is not an incentive – you SAVE money once you start to cut back on all that junk and crappy food that has no nutritional value what-so-ever! On that note, just wanted to share this thought with you guys and officially welcome you to Solely Natural! Why not start cleaning out that pantry? Eat pure, heal right and live whole!
